The triangular test is an evaluation approach designed to highlight the differences perceived by consumers between two seemingly similar food products. This type of test gets its name from the fact that three products are presented to the expert or consumer, who is told that two of them are identical. The tester’s task is then to identify the distinct product and describe the nature of that distinction. Somewhat paradoxically, this discernment test is primarily used to ensure that no perceptible differences are present in a food product when the recipe or supplier changes.
